Reaching New Heights
Seattle’s restaurant and bar scene has grown exponentially over the last few years, and innovative concepts are being added all the time. Surprisingly, even though competition steadily increases, most of the city’s venues are finding a core customer base and doing well.
Tidbit Bistro in the Capitol Hill neighborhood opened just over a year ago and boasts the title of Seattle’s first certified “green” restaurant by the Green Restaurant Assoc. Featuring a menu of Italian fare and Spanish tapas, Tidbit offers a mix of European and Northwest wines and several wine-based cocktails. Owner John van Deinse says Tempranillos and Nebbiolos are popular now, as are cachaça-based drinks. But the restaurant’s real beverage highlight is its large selection of grappas. “We’re educating Seattle about the world of grappa”, van Deinse says. “With a lot of explanation, our customers are getting into it.” Tidbit’s menu lists more than 30 grappas ($7 to $25 a 1-ounce pours) at any given time, with the selections rotating regularly.
